I need to schedule individual one-hour meetings for 5 project managers on the same day and want to give them the ability to pick the time slots. What's the best way to do that?

There are a couple of ways you can do this.
The most straight-forward solution is to create a one-on-one event type. Then, when setting up the Availability Schedule for that event type (which you can do within the event type itself using custom hours, or, from the availability tab) - rather than setting up weekly availability - set up date specific hours. Choose the single date you’d like to book these five invitees, and set up the hours you’d like to allow them to choose from (say, 10am to 5pm). Make sure to set the duration of the event type to 60 minutes (one hour), and set the “start time increments” to whatever you’d like (you can do 60 minutes here, as well - or if you’d like to offer more options - set it to 30 minutes so that the start times fall on every half an hour, for example). Once it’s all set up, Share Your Calendly Link with all five invitees and let them book at will!
Another option would be to create five separate One-Off Meeting types. Each of these is for a single invitee and generates a single-use link that you then share with that one person. You’d share one link per person, and each would then be able to book. You can set the availability for each one-off meeting up the same, or you can set specific hours for each person (different for each one-off meeting).
