At this time there is no way to track emails sent via Workflows (or Workflows in general) using Calendly analytics. It’s a great idea, though!
You might find a good solution in an integration with a CRM of some sort, though! You can read more about those options here. I hope this helps!

As it pertains to CRMs, I would suggest looking into the functionality of things like Hubspot, ActiveCampaign and others like them. We integrate with many on this list.
