I have a premium Calendly account, and my team and I are curious if it's possible to set up a Calendly invite where two Calendly accounts can manage a single event. For instance, if we book a demo for January 1, 2024 (2:00 PM) and it's already booked, the initial booking would be directed to Host 1's calendar.

Subsequently, the same time and date would remain available for the next attendee, and if they book it, the reservation would be directed to Host 2's calendar. We're particularly interested in implementing this feature for scheduling demos with our clients. Is this functionality supported by Calendly?

It sounds like a Round Robin event is exactly what you need. This event type basically checks to see which host is available and assigns the event to whoever is available. You can also optimize it for availability or equal distribution. You can learn more about Round Robin events and distribution here:
