We have multiple users on our calendly account and we only need 1 event for booking. 
how can i add more email addresses to be receiving the notification the host email address is receiving once a booking has been made?

If it isn’t necessary to take the other users’ availability into consideration and the notifications are more for awareness, it sounds like exploring forwarding filters might be the best solution for you.
