I have a user in the organization whose email is changing. How do I fix that in Calendly from the admin center?

There is not a way to change their email from the Admin Center right now, but in these cases, its best to direct them to update their login information from the preferences page here: https://calendly.com/app/personal/login_preferences
Alternatively, you can also have them email loginsupport@calendly.com and one of our support team members can resolve this change for you.

Well, it’s complicated by the fact that the user refuses to use Calendly under their current email, so there’s no getting him to do that.
Instead, I guess I have to delete him as a user, then?
You can either delete and re-add them, or you can email the Login Support team and they can action the change on their behalf.
