Is it possible to set up an appointment so the client can choose between joining via phone, online or in-person? Basically, setting multiple locations. (zoom, phone, etc..)

It is! For one-on-one event types, you can let your invitee choose how to meet and offer multiple location options. You can learn more about it here.
