Wondering if there is a way for me to offer specific location options for each day in an event. For example, on Monday I want only Zoom to be available as a location option and on Tuesday I would like In Person meeting to be available, all within the same event. How can I do this without creating separate events?

There isn’t a way to achieve this within a single event type at this time. However, there is a workaround I can suggest!
In this case, you would create different event types for your different locations. That way, you can set the location of the event, and then set the availability for when you would like to be booked for that specific location. Only allow bookings on Mondays for the event type whose location is Zoom, and only allow bookings on Tuesdays for the event type whose location is in-person. Done!
Just popping in to add one more recommendation, if you are looking to share just one link with your invitees to direct them to the appropriate event type.
Users on our Teams plan and higher are able to configure Routing Forms to pre-screen and/or pre-qualify leads before routing them to the appropriate event type.
By configuring a routing form to ask your invitees which day is best for them, or which location option they prefer, you can share one link with them (the routing form link), and then seamlessly direct them to the correct event type!
Thank you for the suggestions. I have created separate events where I have allotted only one location option and had success. Maybe this is an option and can be incorporated in the future.
