If am not mistaken, you are inquiring about an ability to make week-to-week availability rather than setting up weekly availability that stays the same each week? Is that correct? =) 

If so, you can accomplish this by *deleting your weekly availability* settings and using *date specific hours* instead. You can select multiple dates at a time (so, in this case, select seven days if need be, or one day at a time, or a smaller cluster) and set up availability for those dates. Example: this week, you could make yourself available from 9-5 on Monday/Tuesday, unavailable entirely on Wednesday, available from 11-1 on Thursday and unavailable entirely on Friday/Saturday/Sunday. The following week, you could make yourself available from 9-3 on Monday-Thursday and from 11-1 again on Friday, and so on!
