We have team events scheduled using round robin scheduling that are seemingly being rescheduled to other team members without notice. Is there a way to see how/why an event was rescheduled so we know if it was rescheduled by the invitee or by an admin?

If you check your meetings tab, it should show you who it was scheduled by. I created a test booking for myself here:
