"If I make a change in the workflow, such as adding additional reminders, will this be applied to the existing appointments, or will it only take effect from the time the change is made for the subsequent new appointments?"

Changes to workflows will only apply to future meetings. Leaving a resource below, your answer is all the way at the bottom of the document in the troubleshooting area.
