Can I change the Poll vote by asking if Mon, Tue, Wed, Thur, or Fri will be best to have meeting instead of selecting the dates of the meeting?

At this time, the Meeting Poll requires you to pick a date/time. You could adjust the description of it to ask your invitees to choose what specific weekdays/time frames work best for them - But outside of this there is not a way to just pick a day.
